I googled "flair-tending" and found this, among many other things. Evidently it is the kind of show-off bartending that Tom Cruise did in the movie, "*beep*." Cheers! The following is lifted from

Our Flair teacher is Loy Catada, 2001 World Flair-Tending Champion, which he won in Singapore, 2001. Loy is also the current Flair Trainer for the I.B.A. Training centre held in Singapore and travels every year to the World Championships where he runs courses for the Elite Bartenders of the I.B.A. He has won International Championships in Sweden, Poland, Singapore, New Zealand, amongst others. He has won the AUSTRALIAN FLAIR-TENDING CHAMPIONSHIP for the last FIVE years
