I know that singular noun must be put after the word 'whole'. But the example 2) in the quote I can understand because plural noun 'orchestras' is put after the word 'whole'. Can you teach me?

When you use a plural noun after whole, it means 'complete' or 'entire'. In 2) you're talking about orchestras as a group, saying that every musician in each orchestra is involved - the whole orchestra in each case, and there are lots of orchestras which play Latin music!
You can say things like 'whole families moved to the city', and you're not only saying that families moved to the city but that in each case, the whole, entire family (every last family member) went together. |
