I got this sentence from "interview with Dave":

Honestly, not a day goes by when I don't think, "Wow! I'm really fortunate to be doing this."

And I got this sentence from a song:

Not a day goes by that I don't think of you.

Why do people use "when" in the first sentence, but "that" in the second sentence? both are okay?

You could put "that" into the first sentence instead of "when" and be right.

I think both are OK most of the time, but "that" is more commonly heard than "when."

You can use either when or that. The only difference is you can omit that, as in Not a day goes by I don't think of you.
