Can we use "each" with "uncoutable singular nouns"? |

Your sentence doesn't work. You could say:
All the information is expressed using XML.
Each piece / bit / item of information is expressed using XML.
Every piece / bit / item of information is expressed using XML.
All the pieces / bits / items of information are expressed using XML.
The information is expressed using XML.
I think with mass nouns / uncountable nouns, you have to use "all" instead of "each" or "every."
All the rice is wet. Every grain of rice is wet.
All the money is gone. Every coin and bill is gone.
All the sugar is on the floor. Every grain of sugar is on the floor.
All the rain is in the tub. Each drop of rain is in the tub.
