I have seen this sentence on the Internet.

At this sentence, if "piece of" is omitted, "each" is directly used with "a uncountable noun".

I have known that we cannot use "each" with "a uncountable noun".

If if "piece of" is omitted, is "each information of ....." correct grammatically?

It would be better to write, "Each document on my laptop, each piece of information (entry would be better) in my address book, should be accessible by a URI."

Each information is incorrect. Information is an uncountable noun, as you say.
