1. "I have a job interview this Monday for the position of a temporary interpreter." I think it's grammatically correct, all right, but a more natural expression would be, "I have a job interview this Monday for a position as temporary interpreter."
2. "Do you plan to go anywhere else three years from now?" This means the same as, "Do you plan to go anywhere else in three years?"
However, "Do you plan to go anywhere else three years later?" would only make sense if it is part of a conversation where some time is mentioned as the anchor for "later." Maybe you were talking about when the other person is planning on graduating, or getting married, or buying a house.
