Could you please tell me which of the following expressions is correct,
"a student union", "students union" or " students' union"?

Lots of colleges and universities call the main social center of the school the student union. Is that what you mean?
Otherwise, you might find that a group of students want to form a union so that collectively they can try to achieve something. Lots of campuses have their own Black Student Union or Asian Student Union. They might also call them the Black Students Union or Asian Students Union, using the first two words as adjective phrases. Or they might call them the Black Students' Union or Asian Students' Union, meaning the unions belonging to those students, but I think this is the rarest form, even though grammatically correct in other contexts.
