Originally, to dish something out meant to use some utensil to put food onto a plate or dish. By extension, you can dish out information and what not.
When you dish the dirt on someone, or dish out the dirt, you tell all the sordid details about the person. So of course it gets shortened to dish, dishing. What's the dish on Paris Hilton? Star Magazine did some heavy dishing on Brangelina. I know you know all about it, so come on, dish!
