Dear teachers,
Can you tell me the difference between "variety" &" kind"? Can both be used in the following sentences?
The French make many ____ of cheese, from both cow's and goats' milk.

You should use the plural: many kinds / many varieties of cheese.
Also, if you say "cow's milk" then also say "goat's milk."
