I am not sure about the meanings of "spirit and service."
Would you explain it?

It means that the whole idea behind science, i.e. the spirit of science, is an insatiable curiosity that leads to new discoveries. These discoveries are made in the service of science, the purpose of which is to expand our knowledge.
It is a book title by a man (Sir Richard Arman Gregory) who was considered to be a leading scientist in his day, and who was for many years the editor of the magazine "Nature". |
