" One apple, green and rosy, one grapefurit blusing pink..."

I can't imagine a green and rosy apple. Does this "rosy" mean fresh?
Please explain what it is like.

Some apples, such as the Macintosh, are mostly green, but on the side that is exposed to the sun, they become red.
Rosy = rose red or pink.
