Does someone know what it is called when a person says "I saw a black cat." and an ELL hears "I saw a black hat", instead? Also, if someone says "said" and an ELL hears "sad", is that a difference in phonemes or allophones?

An allophone is a sound that is different because of it's placement in a word, for example, /p/ being aspirated at the beginning of a word, not aspirated after /s/, and, in American English, not aspirated at the end of a word.

The vowel sounds in "said" and "sad" are different phonemes. I don't know what to say about the "black cat" "black hat" question. When we say (American English), "black cat, the /k/ of "black" and the /k/ of "cat" are the same; that is, the end of the first word and the beginning of the second blend together. For "black hat," however, we can't blend them together and pronounce the /h/ of "hat".
