Cajun and Creole food satisfies the revelers' hungry appetites.
I'm wondering why not "satisfy" in this sentence.
Does "Cajun and Creole food" refer to Cajun food and Creole food?
Or is it one single compound noun?
What about this?
Mexican and Brazilian food are/ is........?

Food is / foods are.
In the above examples, the subject is "food" which is a collective noun (treated as singular), Cajun and Creole are adjectives modifying food. |
