Hello Purple Meggy -
The answer as to which of your examples is correct depends on what (exactly) you wish to communicate.
If you say, "I have long hair."....you are saying that all of the hairs (presumably) on your head are long. (hair = head of hair)
If, on the other hand, you have one hair which is longer than all of the others...you could say, "I have a long hair."
An old joke -
A guy has just had his hair cut and meets a friend who says, "Oh, you got a haircut!"
The guy responds, "Yes, I got them all cut."
'a hair' cut vs. 'a haircut'
