And what words can 'be on' be replaced with?

This dialogue seems strange to me. The response does not fit the question.

"What are we on for tonight?"

This means "What are we doing tonight?" You can use this when you are making plans with someone. We could also say "What are we up for tonight?"

"To be on for something" means that you have made plans to do something. For example: "Are we on for tonight?" means "Are we going to see each other tonight?" but more casually.

I agree with lotus. "What are we on for tonight?" sounds a bit unnatural.
