A bit rusty of rules regarding capitalisation. Do we capitalise school subjects?

Depends I would say. In expresions like "Institute of History" I'd say yes. Subjects like languages, eg "English", "Spanish" and "French" always yes. Subjects like "drama" or "natural science" no.
