Dear teachers,
Can you tell me the differences between "proof" and "evidence"?
And in expressions such as "over the centuries","over the weekend"what's the use of "over",Can it be replaced by "during"?

Proof is a type of evidence that shows that something is true 100%. Evidence might prove or could prove that something is true, but it is not certain.
"Over" in the examples you gave does have the same meaning as "during". And generally, in similar expressions, "over" can be replaced by "during".
I also think that "over" sounds more casual and natural than "during".
