In the quote, what does 'go easy on' mean? And also, what words or phrases can it be replaced with?

The expression go easy on, when used in connection with cooking, means not to put too much of that ingredient in.

In a restaurant, you can ask the waiter / waitress to go easy on the salad dressing, go easy on the gravy, go easy on the pepper, etc. So the expression was used correctly in your example. I'll get the food out to the customers faster if you'll use less salt in the soup in future.

You can also use go easy on to mean not be too harsh with someone. Go easy on the new student; she's just moved into town and she's a little timid.
