'I think that Professor Baker's book is very satisfying. So it is difficult to understand why people consider Professor Baker's book totally unsatisfying.'?

It means the writer has found Professor Baker's book to be very satisfying and he cannot understand anybody who thinks it's not satisfying, or rubbish, or anything in between.
