I saw #1 in some book. I think that #2 is correct rather than #1.

Hello,
I think you are probably correct--#2 makes more sense. However, I'm confused by "earners." That's not a word that native speakers would use. "Workers" might be a better choice.

Hi,
As is frequently the case in questions like this, each sentence is "correct" but has a different meaning. This type of question often cannot be answered as asked unless you indicate what the intended meaning is, or at least what you think the meaning is. Otherwise, the probable contextual meaning of each sentence must be explored individually in order to sort things out.

If dehydrated foods offer great potential as earners in the long term, they have great long term potential to earn a lot of money. So, you would be well advised to buy stock in some dehydrated food companies. It's a sound investment.

If dehydrated foods offer great potential to earners in the long term, then they provide great benefit in the long term to people who earn money. Oddly enough, it would seem that those same dehydrated foods don't do anything for people who are poor or unable to earn an income. Through some inexplicable mechanism, they only benefit those who are gainfully employed.
So you see, it depends on how you interpret earners, and the prepositions used influence that.
(You get that #1 is correct, right?)
