The word of is optional here. You may omit it with no change in meaning. So, should you omit it? No. Can you omit it? Yes. Would I omit it? Excuse me while I go look for a coin to flip.

As a replacement for sound asleep? No, because they have completely different grammatical functions. Sound asleep is an adjective phrase; to sleep soundly is a verb phrase. So, it depends on what you want to say.
