Monday's to Friday's nights are called WEEKNIGHTS. What are Saturday's and Sunday's called?

Well, I don't remember ever hearing anyone say "weekend nights." (However, if they did, I would understand perfectly.)

Just say the weekend. If you must specifically refer to the nights, say Saturday night and/or Sunday night. Sorry to disappoint you, but that's what most Americans say.
