swindle him out of money = swindle money from him.

There is no difference that I am aware of.
In my opinion, the phrase to swindle somebody out of something is much more common than the phrase to swindle something from somebody, although both are correct and are used.
You can also leave the money or item of value understood and just use the phrase to swindle somebody.
