Without weathering and eroding/erosion, the face of our planet might more closely resemble the lunar surface.

with this sentence, I think erosion is correct grammatically, but someone says eroding is kinds of noun(gerund), so even if we choose eroding, we can't say "it is incorrect" grammatically. Is it true?

I agree. Either will do. However, there is a noun for eroding . It is erosion and it is preferred in this case.
