Having studied all kinds of subjects for many years, we have formed our own plans on how to serve the world better and are well-prepared to put them into action.

I think the underlined part is not naturally written. Is "subject" collocated with "studied"? If not, what verb will do?What else could I write to describe "after we study English, math, history, economics and so on"?

The sentence reads OK to me. "all kinds of subjects" is like another way of saying "a great variety of subjects"

Some universities require students to take classes in many subjects. Other universities require students to specialize in one subject. Which is better?

My response:

Whether to require their students to take classes in many subjects or require them to specialize in one specific subject has long been a controversy among universities. In my eyes, learning different subjects and assignments would enrich the students’ knowledge, would help them expand their social circles and horizons and benefit their resumes. This is why I believe it is better to be required to learn many different subjects.
