Is "put-together" below frequently used?

It can be used that way.
Adjective Definition 2 http://en.wiktionary.org/wiki/put_together
You can also see 'together' used in a similar way.
Adjective Definition 1 http://en.wiktionary.org/wiki/together

But, I don't think it's used very often. I'm guessing that is because it is similar enough to 'well put together', which refers to physical build / qualities (often attractiveness), that it can be confusing sometimes, and 'well put together' is used more often.
To give some indication of frequency, here are some search results.

Lastly, it would be more common to see 'collected' in the sentence you posted, since it's more consistent with 'calm' and 'cool'.
