The company must stay public. This means that a company has stocks that can be freely bought and traded on the stock market. It is open for public investment. This is about the financial choices of a company.

The company must stay in the public eye. This means that the company must remain visible or well-known. Maybe this company has very good marketing, is popular because of movie stars or is involved actively in the community.

"To be in the public eye" means to be seen or followed by general people. For example, actors have to get used to living their lives in the public eye after they become famous. Photographers will start following them around constantly taking pictures of them for magazines and internet news.

2. There was a big eating buffet.
Do you mean "all-you-can-eat buffet"? That is a buffet where you can go and eat as much food as you want, going back for second or third or even fourth plates.
As a native English speaker, I have never heard the expression "eating buffet." "Buffet" or "buffet-style meal" already means that there will be food and eating.
