So they might just be entertaining in the streets to make ends meet *between* finding gigs.
Could I replace "between" with "before" in this case?

It would not mean the same thing.
A gig is a paid performance. So between gigs means in the periods of time between paid performances. Before finding gigs means they are working on the street until they find a paid performance but they have not had one yet. |
