A: Your adventurous streak would be satisfied by climbing up Asia's tenth-tallest freestanding structure.
B: You mean "climbing" as *in* "climbing the stairs," right?

Is "in" necessary in B's words?

Yes, That's what I would write.
The other possibility hinted at, is climbing the outside of the building and so that is the reason for B"s remark.

The other "as in" I can think of are:

F as in Frank, p as in Paul, a as in apple, and s as in Sam.

You could rephrase the original as: B: You mean climbing the stairs, right? You don't really need the climbing as in
