Here's a good one I just heard from a student of mine who is also a teacher. I hope it comes out well here.
1. Form a grid as below:

2. Divide ss up into teams/individual players depending on class size. Write names of teams/Players on the board.
Get someone to say/write a five letter word write virtically/horizontally. Score 5 or ignore first go.

eg.

| | | O | | |
| | | U | | |
| | | S | | |
| | | E | | |


3. Next student/team adds one letter to make another word from any of the letters. Read in any direction virtically or horizontally, but not diagonally.

eg

| | | O | | |
| | | U | F | |
| | | S | | |
| | | E | | |

This reads "fuse" Which is four letters, so student/team scores 4 points.

Next team/student adds a letter.

eg
| | | H | | |
| | | O | | |
| | | U | F | |
| | | S | | |
| | S | E | | |

This reads "fuses" 5 letters, so five points.

It's possible to score off two words:

The next player might write an "i"

eg

Which reads "if" and "is" 2+2=4 points

Don't forget, you can go any direction virtically and horizontally, and it doesn't matter if you have nonsense combinations as long as at least one proper word is made. For instance, the next player might add an "l", I hope you can all see how this spells "file" and "files" and "files" (in two different ways. The justifying is doing funny things now, so you'll have to work out where the letters were suposed to go.)
=4+5+5=14 points.

Continue in this way until all 25 squares are filled up. Add up the points as you go to find the winner.

Apparantly, some variations exist, such as no plurals or -ed suffixes, but I hope you get the general idea.
