Art Projects for Adult Learners

I'm going to be substituting in an adult ESL school over the holidays and am looking for some appropriate art projects that I could use. The students are in their 20-30's.

Each class is 3.5 hrs long, and I'd like to be able to do something fun -- and instructive -- to break up the class.

How about contacting the local schools or community centers and asking if they need a mural? Or you could contact the local hospitals and see if they need something for entertainment for the adults or children. We used to paste Christmas cards in scrap books to show to kids in the hospital but I don't know if anyone ever appreciated that. You plan the project with the students over a period of a week or so and then go and do it during one class. You can show them murals on the Internet - Greenland has a lot in the schools and community buildings or you can go to local community buildings and see what they do. You can do murals of cloth as well so you don't have to take paint to the location and have the mess. You can paint on the cloth or sew or both. A mural of their experiences in some area that is important to them would be my choice - coming to a new country or taking care of the family or work and so on.
We also made puzzles out of calendar pictures for kids and adults (smaller pieces for adults, laminating them on cardboard and then cutting out shapes). You could make a Christmas scene - it doesn't have to be religious, if that is a problem - and put it up at the local senior's home or home for vulnerable women or orphanage, etc. Stores often donate the fixings for all these projects especially at this time of year.
