Advice on teaching an ESOL "Crossing Cultures" cou

I teach at a high school in Japan that sends its second year high school (16 years old) students to New Zealand for a year of language immersion.

In their first year, the students are taught a class called "Intercultural Understanding". The course was only set up a year ago, so the curriculum is unclear. We don't even have a textbook yet.

I would like advice on a textbook about cultural issues that can be used with advanced beginner students.

I found information about a book called "47 Percent American: Coping With Cultural Issues in Middle School" by Lucie Germer et.al, but I'm not sure if it's what I'm looking for.

"Experiential Activities for Intercultural Learning" by H. Ned Seelye also seems useful, but it is not a textbook and the level seems a little above my students.

Does anyone teach a similar sort of class? If so I would appreciate your comments about textbooks, teacher resources, and curriculum design.
