Reading Materials for Adult beginner?

What types of reading materials do I start with for an adult beginner level ELL student?
He is an Alternative Medicine Koren doctor practicing here in the US and I don't know where to start with reading?
His level is low-medium beginner?.... I've only worked with him once so far and I am worried about offending him with "child-like literature"?
Any suggestions?
