This has been the topic of entire books!
But to begin with, we need to understand that there can be no clear separation between ALL FORMS of written language and ALL FORMS of spoken language. A formal speech might be more similar to a written essay and a written CHAT interaction may be more like a spoken conversation. One way to approach this then is to consider where a particular genre of language use would fall on each of the following continuums.
Monologic -----------------------------------Dialogic
Planned -------------------------------------Unplanned
Novel language-----------------------------Pre-fabricated language
Formal ---------------------------------------Informal
Decontextualized ---------------------------Contextualized
