Is it different in England/USA/New Zealand/Austrailia?

One of our books says "lambs".

I have always heard "lamb" like "fish" or "sheep".

I sent the following to him in e-mail, so if you disagree you can respond knowing what I sent.

As far as I know, the plural of the animal is lambs. (There are twenty little lambs eating grass in the yard.) However, the meat of the animal is non-count. (He loves to eat lamb as long as he doesn't remember where it comes from.)
