This is about baseball. I wonder what it means.

A "chance" in baseball is an opportunity when you are in the field to get the ball and make the batter out. 541 straight chances without an error means the ball was hit to the fielder 541 times in a row, and he didn't make an error (a mistake, like dropping it or not throwing it properly) in any of them.
