Which one of the following do you usually use?
1. everything that opens and shuts
2. everything but the kitchen sink
3. anything and everything
4. any other?

You can use all of them, though they all have different meanings, and it depends on what one considers 'usual' to him/herself. I'll stress again that context is the key in many cases.

For example, the idiom "everything but the kitchen sink" means that you bring/include more than you need to bring or include.
