Does it mean a 'very cold night'?
If so, may I have a sample sentence?

Yes, it means a very cold night.

True story: A few years ago my in-laws were visiting at Christmas and the electricity went off temporarily. It was only for a few hours but it got rather cold and I noticed my brother-in-law sitting on the couch with our two small dogs on his lap. "It´s a three-dog night," he said when I saw him, "but apparently you only have two."
