Hi,
I'm wondering what time of year is best for looking for a job in the Middle East. I'm especially interested in working in Lebanon, Syria or Jordan.
When is the start of the typical academic year?

The academic year in the countries you mention is roughly the same as that in the "West" - September - June (more or less). In unis, there are breaks for the two Eids, which this year will be in - roughly - November and January.
As for applying, I don't think there are too many opportunities in the countries you mention, but if you're interested, i would start looking right away. I'd imagine that the paperwork for all the countries you mention, esp. Syria, might take some time. |

If you are talking about having a contract with pay and benefits, you would have to have applied for this around the beginning of this year. Work visas in these countries tend to take time, passing security checks and such. Most people teaching for the first semester in the Middle East are already arriving.
That said, you might be able to just go to the countries you mentioned and find an opening, but this will be for very basic pay with no benefits. It would likely be part time. But, since you didn't specify, perhaps that is all you are expecting.
