I've been teaching SAT in China for the last three years. Last year was particularly challenging on account of the SAT redesign.

The new SAT essay is particularly challenging for my Chinese students. The main problem is that teaching the essay can take up an inordinate amount of prep time, but is actually the least important aspect of the test. In fact, the essay will not be required (or even accepted) at the vast majority of the universities that my students will apply to. It's only actually important for maybe the top 20% of my class.

However, the University of California system still requires it--and U of C is very popular in China.

At any rate, any suggestions on which books or methods are best for teaching the new SAT essay to students whose TOEFL scores might be around ~80-100?

Learn it yourself, then adapt it for E2 by simplifying the terms. I've used it for E2 students. The four forms presented provide pretty good examples.
