I was travelling in China in 2016 and had set up a Citibank account in Australia which allowed me to withdraw funds from various Chinese banks without any transaction fees or exchange fees.
Would it be possible to use this account to receive my wages whilst teaching in China?

Your salary deposits into whatever bank your school uses.
You can open a Citi account in China. Last I've read, you need a 50,000RMB deposit.
Ask your local Citi bank to help you open a Global account. You can link both accounts. Then you'll be able to transfer funds between accounts. They'll charge you for the exchange rate. No fees. |

Usually what happens is the school will have an arrangement with a specific bank and that's the one you will use. You don't normally tell the school to transfer money to a bank account already established. Schools often don't even want to put money into an account and they just pay you in cash.
If this is really important, ask the school ahead of time. They already know what bank they will have you use with them. |
