Could someone direct me to some info on where to get a job doing this? Teaching English to resort workers on some beach in southern Thailand would be pretty cool.. or is that one of those dream jobs that don't actually exist?

Get the contact info for major hotels/resorts and send them your Cv/resume. Cool

It would probably help greatly if you have teaching experience/credentials and are already in Thailand.

once in a while you do see ads for gigs like this.

either I saw one posted on Dave's for the Maldives or someone had just accepted an offer to go and teach there

but there are other jobs for english speakers as well - not just teaching English, from what I understand

Sadly, every unqualified backpacker who passes through has this dream.
(It's not my intent to pass judgement on you - just want you to know that there are loads of people willing to work this dream for a mere pittance)
At least get yourself a certificate and commit to a year. The competition will be intense for the decent jobs - and most hotels will want you to have had some previous experience. Figure also - they don't hire in high season (coming up!) as everyone is too busy working too many hours already. Often, if a teaching position is vacated, they will wait until low season to fill it.

Go cut your teeth on the field at ITIM, the International Hotel and Tourism Management Training School in Bangkok. The pay is poor, but it will give you some credibility in the T&T industry. And great students!

These jobs exist and generally get filled the minute they're advertised by some Bangkok slumming late-middle aged guy who wants to go and die on the beach -- and has about 12 years of TEFL experience. When they are advertised it's usually through hotels and the advertisements are found in the Classifieds section of the Bangkok post.

Unless you're qualified, experienced and in-country you don't stand a chance. Unless you mean a beach in Pattani province where teachers (all Thai so far) get shot at pretty regularly by Muslim insurgents -- and which is currently under martial law.
