OK, let's change the subject to something that tastes good. Food! Thomas Jefferson made a compilation of French dishes and how to prepare them during his time in France in the 1780's. Later when he went home he was able to have his staff prepare them for him. I doubt I'll have a staff, but I would like to enjoy some of the things I've grown accustomed to here when I go home.
So what's your favorite Chinese food and how do you prepare it? If you know something regional and quite tasty, I would like to hear about it. |

In Southern Henan Province they have what they call local flavor.
Take any Chinese dish and add the local flavor.
What is the local flavor?
Peppers.
No not just any peppers. We have what looks like 21 different peppers and they come ground, chopped, sliced, diced, whole, just so long as there are peppers, peppers + peppers in everything from dog hot pot to cucumber salad.
They like their peppers hot and hotter, plus hotest possible. This is worse than Mexico!
As for me, I like to eat people and wouldn't you know it, I just love them cooked in peppers. |

How to cook Chinese food.
Take a beast and kill it. It does not matter what the beast is, the Chinese will eat it. Turtles, snakes, dog, chicken, duck, fish, whatever. Unless you are cooking beef make sure to leave the head, feet and other body parts on the animal. This is very important.
Take any kind of vegetable, cut it up and throw it in a pan with a lot of oil. Make sure you cut up a lot of ginger, because ginger is overpowering and will kill any other taste.
If you want to make soup, take any kind of vegetable, meat (as above, make sure the head and feet are in the soup IMPORTANT) and hot water. The soup must be watery. Think hot water with food inside.
For drinks, it is maotai, beer, red wine and coca cola for the kiddies. It always comes warm as the soup. Chinese cannot drink anything cold, it gives them hives. Also, here in Hangzhou, they always give you the famous green tea, which is really grass clippings and hot water (true)
There are no ovens here (as well as clothes dryers) so forget about making bread, or pie or anything baked. Actually Chinese bread is quite good. I do like some Chinese dishes, such as baozi, noodles, dumplings and a few other things. I just don't get the head and feet routine.
Desert is cut up watermelon, or if you're lucky pineapple. Also remember, if the Chinese like to eat it, it usually tastes like dung.

OK so the best Chinese food is in Vancuver or San Francisco!
On a plane to Israel they announced eat your last bagel now because bagels are not made in Israel, they are an American Jewish thing!
I was in a restraunt in Shenyang and they had a meat display.
Pig snout, just the little round flat end with two holes in it; pig ears; pig tail; and pig feet. They also showed chicken necks and feet. I exclaimed to my Chinese wife, "What the he** do you people do with the good parts?"
Her sweet reply "But honey, these ARE the good parts."
Then they brought out the silkworms and sea cucumbers.
I am a quick learner! How quickly I came to appreciate their good parts of the pig and chicken as opposed to the silk worms and sea cucumber!  |
