Hi there

I am seriously thinking about heading to Osaka or Kyoto and trying to find a job.
I have done a year in korea, so I have a little experience. I also have a 3 year university degree.
What are my chances on finding a job?
And how much money should I budget to take whilst I am looking.
I have no contacts there, so nowhere to stay...

What country is your passport from?

If America - you have no chance of finding a job. You need a 4-year degree. If Canada, Australia, New Zealand, U.K. - you can get a work holiday visa. Osaka and Kyoto will be a tough market to land a job in.

Plenty of work here in Osaka. The thing is though a lot of it these days is with kids or the "big" chains. $3000 should be enough to tide you over as long as you're not too picky on where you start and that you can live frugally until that first paycheck comes rolling in.

New Zealanders only need a 3 year degree to get a work visa here.

Undergrad degrees are 4 years in the US and Japan hence Nismo's 4 year comment.

Look for jobs in http://www.kfm.to and it depends on the time of year you apply.

March or April?
It depends on what kind of position you're looking for (eikaiwa school, ALT position at a public school, etc.). Because the public school year begins in April, coming in early March would be best. If you want to work at an eikaiwa school either March or April would be OK.
