This discussion is also helping me with some of my 1 on 1 students.
I have taken the option of developing a number of materials based on the students requirements beforehand and also on other general issues when they come up.
As I am teaching marketing, accounting, organisational behaviour, hr etc when I really only have a marketing background it can be quite daunting but preparation is the key here. Even if it takes you a few hours for 1 lesson a good report from them can push your reputation higher.
I have found a number of websites to help in my development of materials:-

These have helped alot.
I would concentrate on their presentation skills and get them to do a presentation a week. Push them hard.
Present each week on a topic such as presenting to market analyists ask them tough and difficult questions. If you can video record these presentations and play them back and get them and their peer to critique their work.
An hour is a short time but if you can break up 30 minutes for presentation, ask question, discussion etc and the other half on vocab then this would provide alot of value to them.
