Does anyone know what the hours and days of operation are for the Taiwan consulate in Bangkok? (pre-planning a visa run I hopefully won't have to take)

Most people avoid the Bangkok office because they are relatively slow and problematic when processing visa applications. I can think of a lot worse places to be stuck for a week.
