I am tired of the towny ignorance on this forum and want to set the record straight with regard to eggs with double yolks.
There is no relation between eggs with double yolks and GM or any kind of genetic engineering.
Some, usually young adult hens when they first start laying eggs produce eggs that have two yolks in them. Once the young hens` egg producing organs start getting syncronised they stop laying eggs with double yolks. Some hens have an inherited characteristic whereby they produce double yolked eggs for their entire life.
In case you were wondering yes two chicks can hatch from one egg but it is rare.
I hope this settles the matter. |

Yes, but this doesn't explain how the dioxin gets into
BOTH yolks. They only know how to do that in Izmit. |

If you ordered 2fried eggs for breakfast how could you be sure that that you had two eggs and not a double yolk egg? Could you tell by the size of the egg white? |

Now this is getting really tiresome. Have you ever had this problem? No. Why not? Because there are only 2 reasons why you would get an egg with two yolks:
1. From a young adult hen who was laying for the FIRST time.
2. From a rare hen that had inherited the ability to produce double yolks.
Buying eggs from supermarkets means that you won`t have any problems. You will get your bog standard eggs.
Buying from a street market you have a number of options. The eggs haven`t met the factory standard required of supermarkets so you can buy:
small eggs
large eggs
double yolked eggs
''bantam'' eggs
''village eggs''
BTW bantam hens are a small species of chicken-don`t know what it is in Turkish. Bantam-means small sized-they have bantam weight in boxing. |

You brought it up. does a double yolk egg make a better omlette? |

Now you are just being facetious. It doesn`t matter. If you go to the street market and buy ''iki sarili'' eggs you will pay for and get eggs that are a bit bigger. They just have two yolks and proportionatley the same amount of white. Make an omlette and you will get the same omlette. Just remember the eggs are bigger and 2 yolks are 2 yolks. |

I never knew buying eggs was so complicated. I usually go to Gima pick up a carton, open it and check none are broken. sometimes I will go to the bakal and ask him for a little plastic bag(we know your thoughts on this) and pick the ones near the top.
btw do you keep eggs in the fridge or not. I keep them in the fridge. i'm sure i heard that if you bake it is best to keep them at room temperature. |

Jesus I didn`t know people could be so naive. What a great idea I will choose my eggs from the top-it doesn`t matter-the shopkeeper will just even out the new, old, eggs from the top, back. new, old etc, Do you think they throw away the eggs people don`t choose?
Buy your eggs from Gima etc-good idea if you want standard battery eggs with a standard size and weak yolks. Why don`t you go to a decent street market and get good quality eggs?
Keep them in the fridge like medicene? If you are buying Gima eggs it doesn`t really matter. If you are buying non-battery eggs then room temperature. |

Wait wait wait a minute.... are you saying that the yolks are also
more robust in the iki sarili yumurtalar? You'd think that the yolk
power would be diluted between the two.
And a "bantam" is indeed a boxing weight category; a bantam is
a small chicken.
31, were you a chicken farmer in your former life in the UK?
You seem to have a lot of insight on these noble creatures. |

No I meant that if you compare battery hen eggs and eggs from a street market you will find that the battery hen eggs have weaker yolks. There is no difference between double yolk egg strength and single yolk strength all things being equal.
Never been a farmer but in TEFL I have met:
mini cab drivers, psychtherapists, pub landlords, bankrupts, architects but usually the same old dossers. |

the american egg board says the following:
-----------
What is the best way to store raw eggs?
Continually keep raw shell eggs, broken-out eggs, egg mixtures, prepared egg dishes and other perishable foods refrigerated at 40 F or below when youre not cooking or eating them. These foods should not be left at room temperature for more than 2 hours, including the time you use to prepare and serve them. Allow no more than 30 minutes to 1 hour when its 85 F or hotter.
-----------
i don't know 31, you're the eggspert here, but the egg board people don't make the gima egg vs pazar egg distinction in storage like you do.
i'm really confused...
who should we listen to, american egg board or eggspert 31? |

double yolk eggs are kind of a specialty. There is a guy in galata who sells them at inflated prices in nice baskets. I like them and use them like real eggs. though I only bought them from him once (I wanted teh basket). I use them like normal eggs. When you fry them they look a little weird, but they taste much better than gima eggs, maybe as good s izmit eggs, which as far as I know I have not tasted. |
