Could anyone recommend some good estancias to stay at for a night or two? Im looking for something on the lower end of the price scale, and wouldnt mind being able to participate in some chores. (Im not an expert horse rider but have riden a few times and can stay on.)

Actually I've just come back from an Estancia in Cordoba. It is part of the Hostellig International group and has dorm rooms for $25 if you are a member or $25 if you are not. you can do horse riding, milk the goats (they are so cute!!) and do other things. There is a river there to swim in.
I'll write more when I come bck off my holiday
