backpacker hostels keeping records of guests

Why do you backpacker hostels and guesthouses keep a record of guests' passport numbers and issue/expiry dates?

I have no specific reason for asking, I'm just curious what these businesses do with my personal information after I check out?

I was told that in China anywhere a foreigner stays the hotels, hostels or even households have to give the passport numbers to the local police.

This a very common practice, not only in China, but in many other parts of the world, even in Europe. I can't see them doing anything with your personal information unless you commit a crime. I wouldn't worry about it, just keep sense about your visa limitations make sure you don't over-extend it.
