what I'm looking for in next September.

I want to work in a country in Europe (prefer EU) that has decent (cheap) air connections to Ireland and the UK.

Also somewhere an EFL newbie (I've a couple of months p/t experience) will find work and will find the cost of living manageable against the wage (I'm not looking to earn a fortune).

Somewhere the government situation is stable (ie so I feel safe).

I'm looking at nearly every country but can't make my mind up.

Depending on your qualifications, I'd say Poland is the perfect fit for you by every one of those standards.

Poland? Hmm. Would it be enough money that I could enjoy visiting my family in Ireland/UK or would it be flight home and then struggling to make ends meet for a bottle of coke?

That little caveat wasn't stipulated in your original post Laughing
I know some lawyers back in the States who can't afford to comfortably visit the places you've mentioned; never mind EFL-ers!
I'd guess that, with some qualifications (and depending on city), you could make somewhere in the neighborhood of 800 euro and be able to save perhaps 15-20% of that; this also, of course, depends on your lifestyle.
I'm no Poland expert, however, you'd want to double check...

Latvia for example... with the right school you could get 600 GBP a month plus flat. Ryanair flights to UK/Ireland and you probably could save about a fifth of that if you didn't splash out too much.

Spain maybe 1000 euro a month outside the big two cities and a flatshare from 150, would be doable as the cost of living is low. For better salaries you'd have to try Northern Europe - Germany for example. Benelux and Scandinavia would provide good dosh but as a newbie you'd struggle to find anything. Other than that the best cash seems to be in Middle East / East Asia.
